Sunset and Yummy Dinner




We had a laid back weekend, staying in and renting movies and watching football. On Saturday we decided to go check out the surf that has been keeping us from Scuba diving the past few weeks. The waves were reported to be 6-8 feet at our local beach (about 2 miles away). Big waves make beach diving not fun, and big waves + me + boat ride to Catalina for a boat dive = A lot of Sickness for me (yes, even with medicine), which is not fun either! So anyway, we went around sunset for a little walk and it was very pretty! In the first picture, you can see Catalina Island to the right, in the distance...(sorry for the bad quality of pics, they are with my phone).


On Sunday Jeff made a delicious pulled pork dinner. It slow cooked all afternoon in the oven and made our downstairs smell so good! Below is the pulled pork before adding the bbq sauce and the recipe Jeff used (he kinda combined a few different recipes, as well as our friend's tips to make up his own)...


- 1 tablespoon each of chili powder, onion powder, paprika, salt, pepper, garlic powder, cumin, and cayanne pepper
- 1/4 to 1/2 cup of brown sugar

Combine all spices and brown sugar and rub over a pork shoulder (we got a 4 pound pork shoulder). Cover very very tightly in foil. We used a few layers of foil and baked in a glass rectangular baking dish. Bake at 275 for about 5 hours (for a 4 pound pork shoulder). It will be falling apart tender when you take it out! Remove from juices, pull apart with fork and add your favorite bbq sauce. Yummy! We put it in buns and had pulled pork sandwiches. Next time instead of BBQ, we will add Mexican spices and serve it with guacamole, rice and beans in a tortilla-- Carnitas style!

That is nice you guys got to go walk on the beach :) looks beautiful! Jeffs pulled pork looks yummy! We will have to try that!
